10 Mini Meals for When You Don’t Feel Like Cooking

Sometimes you just don’t feel like cooking. And maybe “sometimes” is more like “all the time,” and that’s okay too. I love to cook, but occasionally the thought of prepping, dirtying pots and pans, and cleaning the kitchen sounds terrible. For those times when cooking seems like too much work and takeout isn’t an option, try one of these easy mini meals combinations.

  1. Whole-grain toast topped with avocado and dill or red pepper flakes. Feel free to add your favorite herbs or a crunchy veggie like sliced cucumbers.
  2. Cottage cheese topped with salmon (from a pouch or can is A-OK).
  3. Corn tortillas filled with melted cheese, black beans (drained and rinsed), and salsa.
  4. This 3-ingredient smoothie.
  5. 2 hard-boiled eggs with smashed avocado, kosher salt, and chili pepper sauce.
  6. Roasted chickpeas tossed with whatever frozen vegetables you have.
  7. Sliced apple with string cheese and turkey jerky.
  8. Cottage cheese with sliced apple and shelled pistachios.
  9. Whole-grain crackers with hummus and sliced vegetables.
  10. Lettuce wraps made with rotisserie chicken.

  1. For a quick, no-fuss lunch, I like to chop a wedge of iceberg lettuce into bite-sized pieces that I place in a small salad bowl. I sprinkle 1 large grated carrot on the lettuce. I put a half-cup of cottage cheese on the grated carrot. I top that with 1/4 cup of cold baked chicken, or 3 left-over cooked shrimp, or 1/2 small can (drained) of tuna fish. I add a few of the following: cherry tomatoes, olives, canned navy or garbanzo beans (drained). Last, I use a lite salad dressing to complete the salad.

  2. I join the TOPS in2020 i had to louse 35 lbs I did it before June that year and been a Kops never lost it.
