Rosemary Carrot Fries

As promised in the last Wellness Wednesday, this week’s blog features a tasty and simple recipe you can try this month. My motivation to cook has dipped a bit lately, and simplicity is the name of the game. These roasted carrots with rosemary “fries” pair perfectly with grilled chicken, steak, or chopped and topped on your favorite garden salad.

What’s your go-to healthy option when you don’t feel like cooking?

Ingredients
– 6 large carrots, peeled and washed
– 1 t. olive oil
– 1 t. rosemary (dried is fine)
– pinch of kosher salt
– pinch of ground pepper

Directions
1. Preheat oven to 400ºF.
2. Cut carrots into thin “fries,” about 4-inches long per fry. You should end up with around 41 fries.
3. In a mixing bowl, combine all ingredients—except for rosemary—and mix well.
4. Spread carrot fries out in a single layer on a roasting pan.
5. Place pan in oven and roast for 20 minutes. Stir at 20 minutes and add rosemary, then place roasted carrots back in oven for an additional 15-20 minutes.

Per serving: 63 calories (13 from fat), 1.5 g total fat (0 g saturated fat), 0 mg cholesterol, 137 mg sodium, 14 g carbohydrates, 3 g fiber, 6 g sugar, 1 g protein.

  1. What a pretty and colorful side dish ! since we are not fans of rosemary , we use oregano or basil for spice. Even the children love it !
