If you’ve been in a grocery store lately or searched for low-carb recipes, you’ve probably come across cauliflower pizza crust. It seems that this tasty and trendy food is enjoying its time in the spotlight. But before you shell out for this pre-packaged treat, don’t forget about all of the options you have with a simple head of cauliflower. Here are a few of my favorites at the moment:
Cast iron cauliflower – Sometimes my favorite recipes come from a desperate need to go grocery shopping and being forced to get creative with what I already have on hand. Enter cast iron cauliflower. Using one of my favorite cooking tools, all you need is a head of cauliflower, olive oil, your favorite spices, grated parmesan cheese and a jar of marinara (if you’d like). Heat the oil in the pan while chopping the cauliflower into florets. Toss in the florets and stir until they’re slightly browned, adding your favorite herbs or spices (I just used a pinch of kosher salt and garlic powder). Add a few dollops of marinara sauce, a sprinkle of parmesan cheese and place in a preheated oven (about 350° F) for about 15 minutes or so. I was pleasantly surprised at how delicious this turned out, and my husband loved it too!
Cauli-tacos – Don’t let Tuesday have all the fun. Make any day “Taco Tuesday” with cauli-tacos. Chop cauliflower into tiny florets and sauté in your oil of choice with mushrooms and onions. Wrap in a toasted corn tortilla and top with your favorite taco staples, like salsa and avocado.
Cauli-omelet – I’ve shared this before, and it’s one of my favorite breakfasts. Sauté cauliflower “rice” in oil, add a couple eggs or egg whites, and top with spinach or your other favorite greens. The cauli rice gives the omelet a delicious fluffy texture that’s light but filling. Try this as a healthy breakfast or even as breakfast for dinner!

Great cauli-recipes, Maggie! Buffalo cauliflower bites are a tasty, healthy snack too:
6 cups fresh cauliflower florets
2 teaspoons garlic powder
pinch of salt
pinch of pepper
1 tablespoon melted butter
¾ cup hot sauce
Preheat oven to 450. Spray baking sheet with olive oil. Set aside. Mix the garlic powder, salt, pepper, melted butter, and hot sauce in a bowl. Add the cauliflower into a large gallon-sized bag, pour the buffalo sauce into the bag. Shake until the cauliflower florets are fully coated. Spread on baking sheet. Bake for 20 minutes. Serve with blue cheese dressing, if desired.

I love your posts! Here is a recipe that my family loves and it is called “Cauliflower & Broccoli Casserole:
3 cups cauliflower; 3 cups broccoli; 1-10 oz can cream of celery soup; 1/4 cup shredded cheddar cheese; 1 1/2 tsp. lemon juice; 1/4 cup fat-free mayo; 1/2 tsp fresh ground pepper; 1/2 tsp garlic powder; 1/4 cup Parmesan cheese; 1/4 cup breadcrumbs; paprika
Preheat oven to 350 degrees. Steam cauliflower and broccoli flowerets until cooked but still crisp. Place in a 2-3 qt. casserole dish. Mix remaining ingredients (except for the paprika, Parmesan cheese and breadcrumbs) and pour evenly over the veggies (I add a little water to the soup mix). Mix breadcrumbs and Parmesan cheese together and sprinkle evenly over the casserole. Garnish with a few shakes of paprika. Bake in oven for 35 minutes.

Smash and eat your way to a slimmer you. Use the Move Over Whipped Buttermilk Butter tastes a little like sweet buttermilk and makes mashed potatoes dance.
