Gluten-Free Valentine’s Day Dessert

Candy HeartsWhen you think of Valentine’s Day treats, you may think of candy hearts, a box of chocolates or the twin packs of little pink heart cupcakes (a personal favorite). Unfortunately, the sugar and calories in these sweets can add up quickly. That’s why I turned to Dena McDowell, a Registered Dietitian and nutrition expert for TOPS. She shared a light and delicious recipe for gluten-free raspberry chocolate mousse.

Impress your sweetie (or yourself!) with this dessert for Valentine’s Day:

Gluten-Free* Raspberry Chocolate Mousse

Ingredients:

100 g. dark baking chocolate

1 c. fat-free half-and-half

2 T. sugar

½ T. vanilla extract

1 ½ c. fresh raspberries

Directions:

  1. In a double boiler (or take a small sauce pan with simmering water with a heat-proof bowl resting on top of it), heat ¼ cup of fat-free half-and-half, stirring constantly until liquid begins to steam.
  2. Add chocolate and stir until mixture is fully melted and smooth.
  3. In a separate bowl, whip remaining half-and-half until soft peaks begin to form. Slowly add sugar and vanilla.
  4. Add whipped mixture to chocolate, slowly mixing together.
  5. Fold in half of the raspberries.
  6. Spoon mixture to six bowls and either serve immediately or chill till serving.
  7. Top with remaining berries before serving.

Number of servings: 6 (1/2 c. serving each)

Nutrient values per serving: 154 calories, 7 g. fat, 20 g. carbohydrate, 11 g. sugar, 3 g. protein

Food Exchanges: ¼ fruit, 1 carbohydrate**, 1 fat

*If you have dietary restrictions, always check the ingredients list on packaged foods to make sure the various brands do not contain wheat.

** If you are using TOPS’ Food Exchange Cards, you may count any choice labeled “carbohydrate” as a starch for simplicity’s sake.
