My motivation to cook has dipped a bit lately, and simplicity is the name of the game. These roasted carrots with rosemary &#8220;fries&#8221; pair perfectly with grilled chicken, steak, or chopped and topped on your favorite garden salad.<\/p>\n<p>What\u2019s your <a href=\"https:\/\/www.tops.org\/tops\/TOPS\/FeaturedArticles\/FocusOnNutrition\/salad-bar-in-a-jar.aspx\">go-to healthy option<\/a> when you don\u2019t feel like cooking?<\/p>\n<p><strong>Ingredients<\/strong><br \/>\n&#8211; 6 large carrots, peeled and washed<br \/>\n&#8211; 1 t. olive oil<br \/>\n&#8211; 1 t. rosemary (dried is fine)<br \/>\n&#8211; pinch of kosher salt<br \/>\n&#8211; pinch of ground pepper<\/p>\n<p><strong>Directions<\/strong><br \/>\n1. Preheat oven to 400\u00baF.<br \/>\n2. Cut carrots into thin &#8220;fries,&#8221; about 4-inches long per fry. You should end up with around 41 fries.<br \/>\n3. In a mixing bowl, combine all ingredients\u2014except for rosemary\u2014and mix well.<br \/>\n4. Spread carrot fries out in a single layer on a roasting pan.<br \/>\n5. Place pan in oven and roast for 20 minutes.
