When she decided to be healthier, she knew she needed to include them whether she liked it or not. She started buying frozen veggies and jazzing them up with a little bit of cheese or a small serving of a healthy salad dressing (she now makes her own). She then began incorporating more salads and adding tasty ingredients like goat cheese, apples, and chicken, fish or nuts for protein. Now, she enjoys roasting Brussels sprouts and making\u00a0<a href=\"http:\/\/blogs.tops.org\/wellness-wednesday\/playing-nice-with-cauliflower-rice\/\">\u201criced\u201d cauliflower<\/a>, which involves tossing cauliflower florets in a food processor. Check out her go-to cauli-rice dish:<\/p>\n<ol>\n<li>Saut\u00e9 cauliflower \u201crice\u201d with avocado oil (olive oil works, too).<\/li>\n<li>Toss in sugar snap peas, carrots, sweet peppers, endive, chopped apples and salt. If you don\u2019t have, or don\u2019t like, a certain veggie, add one you do like and don\u2019t be afraid to play with different flavors.<\/li>\n<li>Serve right away or scoop the mixture into silicone muffin liners and freeze for a quick and easy bite later.<\/li>\n<\/ol>\n<p><a href=\"http:\/\/blogs.tops.org\/wellness-wednesday\/wp-content\/uploads\/2017\/05\/muffin-tins.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-1140\" src=\"http:\/\/blogs.tops.org\/wellness-wednesday\/wp-content\/uploads\/2017\/05\/muffin-tins-271x375.jpg\" alt=\"cauls-rice dish\" width=\"271\" height=\"375\" srcset=\"https:\/\/blogs.tops.org\/wellness-wednesday\/wp-content\/uploads\/2017\/05\/muffin-tins-271x375.jpg 271w, https:\/\/blogs.tops.org\/wellness-wednesday\/wp-content\/uploads\/2017\/05\/muffin-tins-768x1062.jpg 768w, https:\/\/blogs.tops.org\/wellness-wednesday\/wp-content\/uploads\/2017\/05\/muffin-tins-741x1024.jpg 741w, https:\/\/blogs.tops.org\/wellness-wednesday\/wp-content\/uploads\/2017\/05\/muffin-tins-108x150.jpg 108w, https:\/\/blogs.tops.org\/wellness-wednesday\/wp-content\/uploads\/2017\/05\/muffin-tins.jpg 1200w\" sizes=\"auto, (max-width: 271px) 100vw, 271px\" \/><\/a><\/p>\n<p class=\"first-paragraph\">With the help of her veggie adventures, hiking and weekly TOPS meetings,\u00a0<a href=\"http:\/\/www.tops.org\/tops\/TOPS\/Success\/Featured_Successes\/monica-t.aspx\">Monica lost an incredible 200 pounds<\/a>\u00a0and is keeping it off. She was even able to share her story on the\u00a0<a href=\"http:\/\/www.today.com\/health\/how-did-woman-loose-200-pounds-read-her-5-steps-t107084\">TODAY Show<\/a>\u00a0earlier this year.<\/p>\n<p class=\"first-paragraph\">Monica is proof that, when we\u2019re open to trying something new or different, amazing things can happen.
